Chef Hans Schadler, Chef Steve Perkins and Guest Chef Harmut Handke will collaborate to bring you the following exquisite meal choices:

Hors D'oeuvres: Barbecue seasoned oysters on spinach and red onion salad, blue cheese dressing. Sautéed prawns with a sweet chili sauce and lime dressing. Smoked salmon and cream cheese pinwheel on party rye triangle.

Menu: Octopus carpaccio, sauce Gribiche, American paddle fish caviar on Melba toast. West coast morel cappuccino. Poached Filet of Dover sole with lobster mousseline, white asparagus, chive beurre blanc.

Pink Texas grapefruit and Campari sorbet. Roasted South Dakota buffalo tenderloin, sautéed Hudson valley foie gras, black Truffle jus, potato and shallot mousseline, French beans, grilled tomato.

Bouquet of spring greens in a Parmesan cheese basket, golden balsamic vinaigrette. Seasonal berries with Riesling sabayone, red wine granita.
