In 1995, Helseth opened Carrot Tree Kitchens on Jamestown Road at their original location and was Williamsburg's only scratch bakery for years. Café operations evolved over time and included additional locations in Yorktown and Historic Jamestowne. In June 2016, Carrot Tree Kitchens moved up the street on Jamestown Road to the Colony Square Shopping Center.
